Sake kasu loaf

Sake kasu loaf (pound cake)




Serving: 4-6

18-20 cm loaf pan


Basic ingredients

l 100g cake flour (or flour containing protein less than 8.5%)

l 5g baking powder

l 80g butter

l 2 middle size eggs

l 80g sugar

l 60g FNC’s sake kasu(lees)


Syrup

l 20g sugar

l 30ml water

l 20ml sake – if possible

Directions

Step 1 – Take out butter and eggs from the fridge, leave them for a while until reach room temperature.


Step 2 – Preheat the oven to 170 degrees Celsius.


Step 3 – Cream the butter until it gets white in a large bowl and then add sugar. Cream them together steadily.


Step 4 – Beat the eggs in a separate bowl and add gradually the beaten eggs to the cream (butter and sugar). Add small amount of egg => Mix them => Repeat it for 3 times. Finally, add the sake kasu and whisk them.


Step 5 – Sift together the flour and the baking powder into the large bowl. Then, use a spatula this time to mix the dough from the bottom to the top.


Step 6 - Pour the mixture into the prepared loaf pan and bake in the preheated oven. After 10 minutes, cut the middle of the loaf to bake neatly.


Step 7 – Making the syrup - Heat the water and sugar in a small pan until get boiling. Add the sake, if possible, without heating the syrup.


Step 8 – Bake it for total 35 minutes and remove from the pan and put on the cooling rack. Then, gently drizzle the syrup over the hot loaf. Wrap the loaf with cling when it was cooled down and place it inside the fridge and leave it for a day.

Tip: Try sake kasu raisin loaf!

Soak raisins in sake and later add them at step 5.
