Salmon meuniere with sansho peppercorn yogurt sauce

Ingredients
l 2 center-cut salmon fillets, with skin
l 15g all-purpose flour
l 1 tablespoon olive oil
l 15g butter
l Salt and ground black pepper to taste
Sauce
l 15g FNC’s salted sansho peppercorn
l 50ml plain yogurt
l 1/4 middle size onion
Directions
Step 1 – Season salmon fillets with salt and pepper and leave them for couple of minutes.
Step 2 – Remove the moisture of the fillets by using kitchen paper towels.
Step 3 – Place flour in a small dish and lightly dredge the salmon pieces, shaking off any excess.
Step 4 – Pour olive oil to the frying pan and heat the frying pan on low-heat.
Step 5 – Place the salmon, skin-side down and stir slowly with removing the excess by using kitchen paper towel.
Step 6 – Turn over the salmon when skin-side is brown and add butter. Then, stir flesh-side slowly.
Step 7 – Chop onion and peppercorn to tiny pieces and mix with plain yogurt.
Step 8 – Place the salmon on the plate after flesh-side is brown and pour the sauce on the salmon.
